Ingredients

For the Steak

  • 1 lb thinly sliced ribeye steak I like to use Steak-umm brand 100% beef sliced steak, that I get from my local grocery store. But you can use any kind of ribeye steak, just be sure it is thinly sliced. If you are in a pitch or looking to save a little money you can also use ground beef for this recipe!
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried marjoram
  • 1/2 tsp dried basil

For the loaded fries

  • 1 lb seasoned french fries I like to use regular cut fries but you can also use waffle fries, crinkle cut fries, homemade fries, and even steak fries!
  • 1 green bell pepper thinly sliced
  • 1 white or yellow onion thinly sliced
  • sliced or shredded provolone cheese
  • butter for cooking

Instructions

  • In a large skillet, cook ribeye steak until done. If you are using a regular piece of steak rather than presliced steak, thinly slice the steak once it is cooked through and return it to the skillet.
  • Add the spices and continue to cook the steak until frangent, doing your best to make sure each piece of steak is coated in the seasoning.
  • While the steak is cooking heat the butter in a separate skillet over medium heat until melted and bubbly. Add the onion and bell pepper, and sautee, stirring often until they are soft and slightly caramelized.
  • Add the pepper-onion mixture to the steak, and stir to combine.
  • Top with the provolone cheese, cover, and remove from the heat. Allow the mixture to sit while you cook the french fries or until the cheese has melted. DO NOT STIR IN THE CHEESE!
  • Cook the french fries in the oven or the air fryer according to the package instructions. Or until they are golden brown and crispy.
  • Once the French fries are done, place the hot fries on a serving platter, large plate, or cast iron skillet.
  • Top with the Philly cheesesteak mixture, doing your best to keep the cheese on top. And serve immediately.
  • Enjoy!

Notes

Any leftover Philly cheesesteak fries can be stored in an airtight container in the fridge for 3-4 days. To reheat Philly cheesesteak fries, place them in a single layer on a baking sheet and place them in a preheated 350 degrees F oven, and bake for 10-15 minutes or until hot.

If you like you can also deep fry your french fries for this recipe!

You can also top your fries with cheese sauce or cheez whiz in place of or along with the provolone cheese.
