Ingredients

  • 1 lb french fries or fresh cut potato wedges I like to use homemade french fries/ potato wedges, but you can use any kind of french fries you like. Frozen french fries, waffle fries, crinkle-cut fries, or even sweet potato fries!
  • olive oil for drizzling on the french fries
  • 2 batches taco seasoning
  • 1/2 lb ground beef
  • 1 16 oz can refried beans
  • shredded cheddar cheese I used roughly 2 cups
  • chopped lettuce
  • pico de gallo
  • sour cream
  • guacamole

Other topping ideas

  • green onions
  • hot sauce
  • tortilla chips
  • black olives
  • black beans
  • pickled jalapenos

Instructions

  • Place the cut potatoes, or premade french fries in a large bowl, drizzle roughly 2 tbsp of olive oil over them, then add half of the taco seasoning and toss to combine.
  • Spread in a single layer on a large baking sheet. If you are using premade. frozen fries, bake them according to the package directions. If you are making homemade fries, or potato wedges(I tend to opt for the potato wedges, as I feel they are easy to pick up). Bake them at 400 degrees F, for 15-20 minutes or until the outside is crisp and the inside is tender. You can also make your french fries in an air fryer or a deep fryer.
  • While the french fries are cooking, prepare your taco meat.
  • In a large skillet over medium heat brown the ground beef until it is completely cooked through. Drain off any excess grease and add the taco seasoning( be sure to mix the taco seasoning with water first according to the package or recipe directions.) Reduce the heat to low and continue to cook, stirring occasionally until you are ready to add to your fries.
  • In a small saucepan heat the refried beans with a little water, stirring often just until they are hot. Remove from the heat and set aside until ready to use.
  • Once the french fries are done, transfer them to a parchment-lined serving tray or baking sheet, be careful not to burn yourself as they will be hot!
  • Sprinkle the beef mixture over the fries, followed by the refried beans, and lots of cheese. Allow the fries to sit for 1-2 minutes or until the cheese melts. Add the lettuce and the remaining toppings + any extra toppings of choice and serve immediately.
  • Enjoy!

Notes

Any leftovers can be stored in an airtight container in the fridge for up to 5 days! To reheat leftover nacho fries, simply place them in the oven at 250 degrees and bake until hot.

If you don't have any taco seasoning on hand you can season your ground beef and potatoes with chili powder, garlic powder, onion powder, salt, and black pepper! You can also find my easy mild taco seasoning HERE!

Feel free to use any kind of meat you like for these nacho fries, ground or shredded chicken, ground turkey, or pulled pork would all be delicious!
