- 2 larges bulbs fresh garlic
- olive oil I use extra virgin olive oil
- sea salt
Preheat the oven to 425 degrees F.
Using your hands brush any dirt off the bulbs of garlic, and gently remove the outer papery layer of the peel.
With a sharp knife cut off the top of the bulb. Try not to cut down too far, the goal is just to expose the tops of all the cloves.
Place the blubs on a piece of aluminum foil, drizzle them with a decent amount of oil, and sprinkle them with sea salt. Wrap the bulbs tightly in the foil, making sure that all the edges or firmly closed to avoid any oil spilling out.
*Place the wrapped heads of garlic directly on the rack of your preheated oven and bake for 30-35 min or until the garlic is golden brown and aromatic.
Remove from the oven and allow the garlic bulb to cool completely.
Then using your hands gently squeeze the bulb to push the cloves out. Or if you would like the cloves to remain whole. Gently peel around the cloves and carefully remove them from the bulb.
Discard the remaining peel and blub and use as you would raw garlic.
You can also place the garlic on a baking sheet, a baking sheet lined with parchment paper, or even set it in a muffin tin.
Roast should never be stored at room temperature. If you aren’t planning on using your garlic within a couple of hours of roasting it. You should transfer your garlic to an airtight container, small jar, or sandwich bag and place it in the fridge.
Roast garlic will last in the fridge for up to 2 weeks. Or it can be frozen for up to 1 month.
