Creamy White Wine Pasta Sauce

This creamy white wine pasta sauce is made with simple ingredients and can be on the table in less than 30 minutes. This simple sauce is rich, creamy, and flavorful, it's perfect for weeknight dinners, at-home date nights, and dinner parties!

- 4 tbsp salted butter
- 1 white or yellow onion finely chopped
- 4-6 cloves fresh garlic minced
- 2 Roma tomatoes, diced You can also use beefsteak and cherry tomatoes.
- 1 tbsp cornstarch or all-purpose flour
- 1 cup heavy cream
- 1 cup dry white wine
- 2 tsp Italian seasoning
- sea salt to taste
- 1/2 -1 cup shredded parmesan cheese
- 1/2 box pasta of choice I like to use Fettuccine or Linguine
- pasta water in needed
In a large saucepan over medium heat, melt the butter until bubbly. Add the onion and garlic and saute, until translucent and fragrant, about 3 minutes.
Add the tomatoes and cook, stirring often until they are soft and slightly broken down. While the Tomatoes are cooking, mix the heavy cream and cornstarch in a small bowl. And set aside.
Add the Italian seasoning, to the tomatoes then add the salt to taste and stir to combine.
Add the heavy cream mixture, and the white wine, and whisk together. Bring the sauce to a gentle simmer and continue to whisk until it starts to thicken, add the parmesan cheese and whisk until melted. Reduce the heat and stir often while your pasta cooks.
Heat a large pot of water over medium-high heat. Add a generous pinch of salt and a drizzle of olive oil to the water. Bring the water to a rapid boil and add your pasta, cook to al dente, according to the package instructions.
Drain(be sure to save a cup of the pasta water) and add the cooked pasta to your prepared sauce.
Remove the sauce from the heat and toss the pasta to make sure it is completely coated in the sauce. If your sauce is too thick, add some of the reserved pasta water to thin it out.
Serve immediately with a sprinkle of cheese, a glass of white wine, and some crusty bread.

This pasta is also great served with a squeeze of fresh lemon juice, a sprinkle of fresh cracked black pepper, fresh lemon zest, or some crushed red pepper flakes!
Any leftover pasta can be stored in an airtight container in the fridge for up to 3 days! Reheat any leftovers over low heat with a splash of wine or heavy cream, to help prevent sticking, stir often until heated through.
If you are looking for a non-alcoholic option for this recipe, you can replace the white wine in the recipe with chicken stock, or pasta water!
