I usually make about 60 of these crackers and have a little chicken salad left over. The yield will really depend on how much chicken salad you put on each cracker.
for the chicken salad
- 2 cups shredded chicken you can use any kind of chicken for this recipe, rotisserie chicken, boneless skinless chicken breasts, and even chicken thighs all work great!
- 1/2 cup real mayo
- 2 stalks celery thinly sliced
- 1/4 cup finely diced white onion
- 2/3 cup dried sweetened cranberries
- 1/3 cup sliced almonds
- 1 tsp sugar
- sea salt and black pepper to taste
for the chicken salad bites
- 1/4 cup butter melted
- 60 Ritz crackers
- 3/4 cup shredded gouda cheese
