This boozy pina colada popsicle recipe is super easy to make and is the perfect summer treat! These boozy homemade popsicles are light, refreshing, and full of flavor, making them perfect for any hot summer day! Plus I've included a quick and simple variation to make virgin piña colada popsicles, to ensure that everyone can enjoy these refreshing popsicles!

- 1 20 oz can pineapple chunks you can also use fresh pineapple or frozen pineapple
- 1/2 cup orange juice you can also use pineapple juice
- 1/2 cup coconut
- 3 tbsp coconut rum You can also use white rum or silver rum, just don't use a spiced or dark rum for this recipe!
- 2 tbsp Honey or simple syrup
- coconut flakes optional
In your upright blender combine the pineapple chunks, coconut milk, and orange juice, and blend on high speed until smooth, and creamy. Add the rum and honey and blend to combine, taste, and adjust the sweetener if needed. Pour the pineapple mixture into your popsicle molds leaving roughly 1/2 gap at the top. Place a popsicle stick in each mold, be sure to push it down all the way to ensure that it is touching the bottom of the mold. I usually don't add the coconut flakes until I have removed the popsicles from the mold, but you can sprinkle some on top of the popsicles before freezing them in if you like!
Place the finished popsicles in the freezer and allow them to freeze for 4-6 hours or overnight before removing them from the mold.
Once the popsicles have been removed from the mold, I like to place them on a parchment paper-lined baking sheet and sprinkle coconut flakes over the top. Then return them to the freezer for 15 minutes. This allows the popsicles to freeze solid again and helps prevent them from sticking to each other. Plus I feel the coconut flakes add a nice touch to these popsicles.

These pina colada popsicles can be stored in a freezer bag or freezer-safe airtight container and frozen for up to 3 months!
If you would like your popsicles to be extra creamy, try adding a little coconut cream or vanilla ice cream to the pineapple mixture!
Here is my quick and easy way to get homemade popsicles out of the mold!
Fill a dish, or a sink, that is roughly the height of your mold, with warm water(warm NOT hot water). Gently place the mold in the water, be sure that the water doesn’t touch the popsicles themselves, just the mold. Allow the mold to sit in the water for 20-30 seconds. Remove it from the water, gently wiggle the popsicles around, and pull them out.
Again I like to place mine on a baking sheet and put them back in the freezer. This allows them to freeze solid again, without sticking to each other!
